Healthy Lemon Cheesecake (Trim Healthy Mama S)

I have been craving cheesecake!  I love the Trim Healthy Mama cheesecake recipe in their original book however I wanted something that used less cream cheese.  Long story short is that I have been experimenting and combining a few recipes together (Cottage Cheesecake, Basic Cheesecake THM book page 373) to come up with this recipe.  


Healthy Lemon Cheesecake 

Ingredients

Base

Cheesecake*

  • 250 grams Low Fat Cream Cheese
  • 250 grams Low Fat Cottage Cheese
  • 200 grams Low Fat Sour Cream 
  • 2 Large eggs
  • 150 grams sweetener (I use xylitol which I grind to icing sugar consistency)
  • 30 ml lemon juice
  • 10 ml vanilla essence (or vanilla extract or vanilla bean paste)
  • Quarter teaspoon xantham gum

Method

Base

  • Preheat the oven to 180 c fan forced
  • Lightly grease an 8" by 8" pan
  • Mix the ingredients.
  • Press into a greased dish 
  • Bake for 8 min 
  • Set aside.

Cheesecake

  • Using an immersion blender blend the cottage cheese and sour cream until smooth. 
  • Soften the cream cheese and add to mix and blend.
  • Add the remaining ingredients and blend.
  • Pour over the base and return to the oven.  
  • Bake for 40 min.
  • Remove from the oven and let it cool completely. 
  • Refrigerate to chill completely before cutting and serving.


  • *If you prefer a slightly firmer cheesecake add 1 teaspoon of gelatin to the recipe.  
  • To make a vanilla cheesecake omit the lemon juice. 
  • You can use full fat options to make this recipe if you prefer however it will raise the overall fat content which in turn will produce a higher calorie dessert.  This may not be beneficial to everyone.

Lissy's Frozen Chocolate Delight {THM S}

This morning I awoke to beautiful spring skies! I'm looking forward to warmer weather and frozen treats! I've been especially keen to make a treat which I saw on a friends Facebook time line. Lissy is an inspirational cook (keep those ideas and photo's coming!) and I've been admiring this recipe all winter long! I messaged her over the weekend and she has given me the freedom to share this recipe with you. If you are on a low carb' diet or following the Trim Healthy Mama plan (this falls in the S food category) then this will be on plan for you.

Lissy's Frozen Chocolate Delight

Ingredients

  • 3.5 oz (100 grams) 85 % cocoa dark chocolate
  • Half pint (240 ml) Heavy Whipping Cream.

Optional

  • 1 Tblsp (15 ml) Gelatin (optional)
  • Gentle Sweet

Method

  • Take your favorite chocolate (if you're doing THM do 85% dark or an on-plan chocolate like Lillie's) put it in a bowl broken into very small pieces. 
  • Bring a half pint of heavy whipping cream (or any other milk-like product: almond milk, cocoanut milk, half n half, etc) to the point of scalding (but not boiling). 
  • Pour over chocolate, and let it sit WITHOUT siring for a few minutes, then gently mix until well incorporated (you're basically making a form of chocolate ganache). 
  • Put into popsicle molds and freeze!

Extra tips

  •  Add a table spoon or two of gelatin for an even fudgier consistency. 
  •  If you're doing THM, add a little Gentle Sweet for added sweetness.

SUPER EASY! This is an "S" treat on THM. Enjoy!

My blender is making a reappearance

Over the past couple of years I've been trying to regain my health and part of that journey is learning about eating healthy real food. It's spring down under and I decided to get on the scales to see what my weight currently is.  My daughter has been home for her 21st birthday celebrations, it's been cold, oh the excuses go on and on, but the heart of the matter is I have not been following my healthy eating plan and have been feeling worse for wear. The experience has made me realise that in order to regain my health as well as a healthy weight I need to get better at choosing to eat well.

With the weather warming I'm looking forward to adding healthy Trim Healthy Mama smoothies and fat stripping frappe's into my daily routine.  I think my blender will be getting a really good workout this spring and summer.  Can you recommend your favourites for me to try ?

 In hind sight I wish I had tried to make some more soups and healthy warm sippers using my blender over winter. This is a lesson well learned after getting on the scales and seeing what my over indulgence over winter has done to my weight and general well being.

I have tried all types of blenders and a fair few of them have ended up in the trash!  Experience has taught me that it is worth saving up and purchasing a quality blender if you want a trouble free experience making healthy smoothies and  smooth soups without fuss and which are easy to clean and use.   My friend Amy at Encouraging Moms at Home is giving away this sweet Nutri Ninja Blender  to celebrate the launch of her Ten Day Smoothie Challenge. Luscious Lemon Mousse and Orange Jello {Trim Healthy Mama S Dessert}


I saw this amazing dessert on my Facebook wall a few weeks ago and thought Wow I need to give that a go.  I wonder how on earth I can make it Trim Healthy Mama compatible ? After a little bit of tweaking and experimenting I made the following version.

Orange Jello

Ingredients
  • 2 Peach Tea Bags (I used Tetley brand)
  • 500 ml boiling water
  • Trim Healthy Mama sweetener of your choice.  I used a blend of xylitol, erthritol and stevia. 
  • Optional: 2000mg Vitamin C
  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • 1/4 cup almost boiling water
Method 
  • Steep the tea bags in the boiling water.  Leave it on the bench to cool.
  • Soak the Vit C in a little bit of water to soften and dissolve.
  • Remove the tea bags once the tea has cooled and add in the vit C. (This is optional)
  • Add in enough sweetener to taste.
  • In another cup add in a 1/4 cup of cold water and sprinkle in the gelatin. Set aside to soften.
  • Add in 1/4 cup of nearly boiling water to the gelatin and stir until well mixed.
  • Pour gelatin liquid into the orange mix.  Stir till well combined.
  • Pour half a cup of liquid into each glass.  Lie on it's side and put it into the fridge until firmly set. I used a rectangle plastic container to lay the glasses in.
  • Once the jello/jelly has set it's time to make the Luscious Lemon Mousse.

Luscious Lemon Mousse

I tweaked Key Lime Pie recipe from the new Trim Healthy Mama Cookbook on page 326. You will find the balance of the ingredients there.  I got the idea for this mousse from Gwen's Luscious Lemon Yogurt Recipe.

Ingredients
  • 1/3 cup of fresh lemon juice
  • 5 ml Lemon oil (I used Simply Organic)
  • Dash of Turmeric 
  • Yellow food dye
Follow the recipe found on page 326 substituting the lime juice with lemon and adding in lemon oil and turmeric. Follow the directions and pour into the glasses and put into the fridge to set.

Once it is set put some fresh cream on the top and serve.

As summer approaches for us and I am surrounded by new life I have been encouraged once again to resume my Trim Healthy Mama journey.

I recently purchased the NEW Trim Healthy Mama Cookbook and have been searching for a low carb baking mix to use in more of my cooking.

I have found some really great recipes on pinterest, Facebook and the internet and needed one place to keep them all.

**A couple of things to note ...

  1. Oat Fibre is NOT Oat flour or Oat Bran and those two cannot ever substitute for it. Oat Fibre is bran with all the starch stripped from it and is fat and carb free. Currently very difficult to find locally; only online or through the Aussie Mamas store. The only product you can sub for it is Psyllium (found at any health food or major supermarket).
  2. Integral Collagen/Collagen Peptides are the NON-setting Gelatine. Currently this product is not made in Australia and the only options are the Great Lakes GREEN tin, the THM brand. It has mega health benefits especially for those with arthritis/joint issues.  
  3. Protein Powder is Whey Isolate. Only ISOLATE. Whey Concentrate and blends are not on plan.
  4. Flax meal is also called Linseed in Australia.
  5. Gluccomannan is another difficult product to buy locally. Again, Aussie Mamas have it available, or order online from iHerb or similar, or sub with xanthan gum (will not get the same health benefits) or leave it out.
  6. Almond meal and flour are interchangeable. Almond flour is made with the plain almond nut, the meal is coarser and made with the whole almond (including the skin). Doesn't make any difference to the end product.
**Some items are not available in Australia or other countries.

Low Carb Baking Blends

*Baking Mix (FP) by L.Slote

1 c oat fibre
3 tablespoons coconut flour
2 Tablespoons almond flour
3 table spoons golden flax meal
½ teaspoon glucomannan

 Nutrition for ¼ cup serving: 2.9 grams fat, 1.3 grams carbs

Homemade Baking Mix

2 cups Oat fiber 1 cup
3 TBSP coconut flour
1 cup Collagen Peptides
¾ cup + 2 tsp golden flax seed meal ( if you have whole, grind half that amount of whole and you get the right amount of meal)
6 TBSP + 1 tsp Blanched Almond flour
3 TBSP + ½ tsp Glucomannan powder

Baking Mix (S)

1 ½ cups Oat Fiber
1 ½ cups Coconut Flour
¾ cup Whey Protein Isolate
½ cup Flax Meal
2 Tablespoons glucomannan

Replace cup for cup with flour.

Apple Rose Shortcake Muffins {THM E}


A few months ago all these beautiful images of Apple Roses were filling my news feed on Facebook and all I wanted was to eat one.  This year I've been pursuing healthy eating using the Trim Healthy Mama plan and non of the recipe's out there were going to allow me to enjoy an Apple Rose bake. I've finally found my solution! Enter the Apple Rose Shortcake Muffin!

Shortcake Muffin Mix

Ingredients

    • 1/2 cup of sweetener
    • 1 teaspoon cinnamon
    • 2  1/2 cups old fashioned oats 
    • 1  1/2 teaspoon baking powder
    • 1 cup 0% Greek Yogurt
    • 1/2 cup egg white
    • 1/2 cup sweetener blend
    • 1 teaspoon Vanilla Essence 

    Method

    • Mix sweetener and cinnamon in a small bowl.
    • Take 1/4 teaspoon of cinnamon sugar and sprinkle in the bottom of the silicon muffin trays.  Enough to make 12 medium muffins.
    • Grind the oats and baking powder and set aside
    • Blend remaining ingredients in a blender.  
    • Combine wet and dry ingredients and mix well. 
    • Pour 1/4 cup of the mix into prepared muffin molds.

    Apple Roses

    Ingredients

    • 6 small apples
    • 6 table spoons of water

    Method

    • Wash and core the apples.
    • Cut them in half 
    • Slice each half into 2 mm ( 564in) half moon slices.
    • Fill a glass bowl with warm water and a dash of lemon.
    • Separate and lay the apple slices in the water.
    • Cover and microwave for 3 min.  
    • Set aside until cooked.  (You can steam them too) The apples need to be soft enough to roll without breaking but not mash! Once cooked remove and drain them.
    • Once your apple slices are cool enough to handle it's time to make the rose.  Take the halves and create a straight line about 30 cm (12 in) long.  Lay the straight edges along the bottom.  The apples need to overlap by half.


       
    • Lightly sprinkle the apples with the remaining cinnamon sweetener. This is the only tricky bit because the apples are not being held in place by pastry. Start on the left and roll them up to form a rose.
    • Place them gently into the muffin tin and push them slightly into the Short Cake Muffin mix.
    • Repeat until all apples are cooked and muffins prepared.
    • Bake for 20 min  at 180 'C (350 'F)
    • Remove and allow the muffins to rest in the mold for 5 min.
    • Gently remove and cool on a cooling rack.

    Serving Suggestion 

    • 1 Tablespoon of sweetener blend.  
    • Grind in a coffee grinder until you get a fine icing sugar consistency is reached. 
    • Sprinkle over cooled muffins and enjoy!


    These were a most delightful way to end our E dinner last night!

    Berries and Cream Bake in a Mug {THM - S}

    A couple of weeks ago Briana shared the most delectable recipe on her blog: Peaches & Cream Bake.  Let me tell you it is so good and super easy to make. I do substitute the peaches with berries to make it a Trim Healthy Mama S dessert. I was challenged by one of my fellow Facebook Australia THM ladies to tweak a mug recipe.  Enjoy




    Berries and Cream Bake in a Mug. {S}

    Ingredients
    • 4 tblsp softened cream cheese
    • 1 tsp sour cream
    • 1 heaped tblsp Natvia
    • Dash vanilla
    • 1 Large Egg
    • 2 tblsps thawed Berries
    Directions
    • add cream cheese, sour cream and Natvia  to a mug and mix well. 
    • Add the egg and mix
    • Toss in 2 tblsp thawed* berries
    • Microwave for 90 seconds to 2 min depending on the strength of your microwave.
    * Use thawed berries. IF you use frozen berries it can add too much moisture and prevent your cream bake from setting.

    Trim Healthy Mama Summer in a Cup


    Spring is in the air and I have been looking for something delicious to drink.  I was scrolling through #trimhealthymama on Instagram and saw a post for Green Tea Lemonade. I had read about the health benefits of green tea and really wanted to incorporate it into my daily routine. This is my tweeked version and let's just say that I am no longer hankering after orange juice ...

    Trim Healthy Mama Summer in a Cup Recipe

    • 2 green tea bags steeped in hot water for 4 min*.
    • 2 tsp sweetener or more if you have a sweet tooth.
    • Allow it to cool
    • Add juice from one lemon
    • 2000 mg vit C
    • Optional ½ teaspoon Orange Oil
     *Green Tea is very bitter if you steep it too long so remember to steep for no longer than four minutes.
    ** I also make this drink using  Mandarin Orange Green Tea Mandarin Orange Green Tea as my green tea base.

    Lemon Butter Cake in a Mug {THM S}



    A few months ago I tried out this amazing recipe for a Lemon Butter Cake that I found over at The Coers Family blog.  It is to die for. I got to thinking about how it could be tweaked to a mug recipe.

    Ingredients
    • 1 egg
    • 1 tblsp plan approved sweetener blend
    • Dash of Vanilla Essence
    • 2 Tblsp Cream Cheese
    • 1 tsp butter
    • lemon rind
    • 1 tsp lemon juice
    • 3 tblsp almond meal/four
    • 1/2 tsp baking powder

    Method 
    •  Beat the egg in your mug
    • Add remaining ingredients. Mix well
    • Microwave for 2 minutes on high
    • Let it stand for a minute. Tip it out onto a plate.  
    Serve with
    • A dollop of cream
    • You can make a lemon cream cheese icing with cream cheese, lemon and sweetener blended well.
    Sit back and enjoy guilt free

    Home Made Bread {THM Style - Crossover }

    My Mom's has been trying to create a bread to use on plan with Trim Healthy Mama.  This bread had a lovely full flavour and good texture.  It was easy to slice and took less than five min to make.


    Ingredients
    • 1 cup rye flour 
    • 1/2 cup oat meal flour
    • 1/2 cup flax meal 
    • 2 teaspoon baking powder
    • 1 tablespoon coconut oil 
    • 2 eggs 
    • about 1 cup fat free yogurt 
    • pinch of salt
    Method
    Mix all together mixture to form a soft dough if not add more yogurt.
    Bake at 180c for about 30 minutes.

    My mom added garlic powder and onion flakes for a savoury taste

    Trim Healthy Mama {Review}

    I have a confession to make.  I started hearing all about Trim Healthy Mama on Facebook, my friends in the home education support group I attend and on Pinterest in the middle of last year.  I finally read Gwen's review and took the plunge, I purchased THM in January and when it arrived it sat on my bedside table for six months (this is my biggest regret... to think I could have been eating on plan for the last ten months and reached my weight goal by Christmas !?!)

    I liked them on FB and read the testimony of an older lady whose health had been turned around and I shared that with my Mom and gave her my copy of the book. She has many health issues and has struggled to loose weight for the last few years, in fact she has steadily gained weight... Slowly slowly she has tried and applied the principles.  The weight numbers started going in the right direction and the inches are falling off of her. One day I noticed that she looked different and finally asked and her reply 8 kg (17.6 pounds) with THM! I was shocked. Now I knew I couldn't ignore my own weight/health issues any longer I needed this book too...

    I so badly wanted to try what she was doing so I contacted THM to see if they had any review copies available.  Within hours they had responded and blessed me with a pdf copy of The Trim Healthy Mama.  I have put it onto my Galaxy Tab 2 but was finding it slow reading on there.  Thankfully this week a friend explained to me how to email it to my Kindle.  So much easier to read.

    About the book
    To be honest I have not finished reading this book.  It's 600 pages of information. I'm a fast reader but this stuff is paradigm changing and I find I need to re-read in order to grasp some concepts.  It's not hard it's just loads of information shared in a conversational tone. Pearl and Serene share their journey honestly and openly and are not afraid to say when they have a difference of opinion or experience in a certain area. 

    I'm a tactile book girl so I took my pdf and printed the recipe section and had it spiral bound at our local stationary store.  I chose to print them single sided so that I would have the blank sides to write up my tweaks and the new recipes that I find over on {Trim Healthy Tuesday} a weekly blog hop where many Trim Healthy Mama's are sharing their creations.

    I am in the process of saving to purchase a paperback version of the book in order to use tabs for easy reference as suggested by Gwen's Trim Healthy Mama Quick Start Guide.  I will be keeping it on my Kindle for easy portability and am pleased that I will have both the digital and paperback versions.

    Our Experience
    I am not a fan of coconut.  Period.  I really struggled with the concept of using so much coconut based products.  My mother wisely came over with some bread in a mug for lunch and needless to say the rest is history.  It was delicious and oh so very satisfying.  She made one batch and it was enough for the two of to enjoy.  That was all I needed in order to pluck up the courage to purchase ingredients and start my journey. I have made this for Paul and he is super impressed with how satisfying it is to eat.  He thought he would get hungry and have to eat but was pleasantly surprised that he did not.  I gave him bacon and eggs on bread in a mug. 

    I then tried my hand at cheese cake.  Next time I will make this with more stevia. I served him this for breakfast with cream and berries.  Neither of us were hungry all morning.  He was rather surprised that this was diet food (and sceptical until I told how much weight I had lost in the first week ...) !

    We are still in the early stages of using THM and I will write a follow up post after I get my head around the method. Now let me think there is something about S meals, FP meals, E meals and cross overs.  Once I get all this untangled in my head I will share more.  It's not difficult it's just a new way of classifying your food in order not to create a weight gaining environment in your body.

    I was a sceptical because I was under the impression that I would be constantly counting carbs, points or something but I was encouraged to  “Never include large amounts of both fats and carbs in the same meal unless you are trying to gain or maintain weight. In other words, don’t tandem fuel.” Page 64  and "We don't want you doing a bunch of carb counting , which only leads to needless obsessions and detracts from happiness." I am pleased to say that the THM have done this work for you already by labelling the meals in the the recipe section with the letters S, FP and E.  I just haven't quiet understood how to use them yet.

    My grocery cupboard is being transformed.  My cravings are diminishing.  I used to crave chocolate and thought I would miss it.  The truth is I'm not.  Yes I do love chocolate but I don't have this driving urge to purchase and eat it all the time since I started THM.

    Some people complain that it's expensive.  We are on a very tight budget.  There is no room to sneeze.  Yes some things are expensive and I will need to save for two or three paydays in order to purchase them but having said that the ingredients last because they are not things you need to stock up on every week.  So all I am doing is purchasing one to two items to add to my cupboard a fortnight and that is completely doable.

    I have a very long way to go but this will be a good journey.  I know that I am not going to be hungry and am not going to spend hours counting calories, points, carbs etc. I am going to enjoy becoming a Trim Healthy Mama! I will update here over the next few weeks with my numbers as I use the plan more and more foods as well as share some recipe's.
