Easy Meatpie Topping



Last year while we were in South Africa for a family reunion my sister in law shared her favourite Easy Meat Pie topping.  It takes less then 5 min to prepare and is delicious.

Simplified Dinners {Review}

I was really intrigued when Mystie Winckler contacted me and offered Simplified Dinners to review. I enjoy cooking and am often on the lookout for simple but tasty quick meals to put on the table.  I get a lot of satisfaction trying to get them into one baking dish with minimum fuss.  The title jumped at me and I thought yes that sounds like me.

One of my goals is to simplify life so that I have more time for other things.  Having said this though the one thing I have come to realize is that feeding a family well involves becoming more health conscious and aware of what products contain. 

I loved Mystie's insight that in order to cut out the bad she needed to go on a simplification journey.  I'm there but in all honesty this takes a lot of effort.  Once I received Simplified Dinners I realized that Mystie has done all the work for me.

This is not just another cookbook to have on your shelf. (Most of mine are there collecting dust) This little gem is as it's name suggests simple to use!

I print it off, highlight what I need and go to the store. I stock up with only the items I need for the week. It takes less than ten minutes to prepare a grocery list this way and all the items are wholesome.

East African Chicken

East African Chicken
Ingredients:
  • 1 small chicken
  • 2 teaspoons mixed herbs
  • 1 teaspoon salt
  • Water
  • 1 cup of Basmati rice (or white rice)
  • 1 tablespoon butter
  • 1 Onion finally chopped
  • 1 red capsicum chopped
  • 1 green capsicum chopped
  • 4 tablespoons of peanut butter
  • Optional (cream) 
  • Optional 1 punnet Mushrooms sliced.

Method
  • Put mixed herbs, salt, chicken in a pot cover with water and boil gently till chicken is well cooked.
  • Keep chicken stock to one side.
  • De bone chicken and cut up chicken, set aside.
  • Put rice and 1/2 the chicken stock in a pot and cook.  Add more hot water if needed.
  • In another pot add butter, onion and capsicum. Stir on low heat till onions are soft and tender.
  • Add in the peanut butter and thoroughly mix in.
  • Add in the chicken stock (and some cream for a more creamy flavour)
  • Add in the chicken. Simmer for 15 min for flavours to seep together.
  • Optional add in mushrooms and cook for 10 min.
  • Mix cornflour in some cold water and add to chicken mix to thicken
Serve on a bed of rice with a green salad.

I do not like peanut butter but I love this recipe.

Kransky Potato Bake

I love simple but tasty meals.  This is one of my favourites and is good value for money.


Kransky Potato Bake with green Salad
Ingredients:


Cheese Kransky Sausages (400 grams / 5 people), Potatoes, Butter, Parsley.

Method:

  • Pre heat oven to 180 'C (356 'F)
  • Peel Potato and slice
  • Slice Sausages
  • Layer Potato and Sausage finishing with a layer of potato
  • Sprinkle with parsley and a couple of dubs of butter. (to make this dairy free simply give a lite sprinkle of olive oil)


  • Bake for  1 hour with lid on.
  • Remove lid and grill till golden.


Serve with your favourite garden salad.

Home Made Pies (Argentina)

Last week we were studying Argentina and while I was surfing YouTube looking for some interesting video's to show Sir N on Argentina I stumbled across some one making pies and thought oh yes we can do that

Ingredients
  • Puff Pastry (home made or bought)
  • Mince (precooked with vegetables)
  • Milk (to baste the product before baking)
Ingredients ready

Cut out circles

Add a spoon of mince mix

Fold in half and pinch pleat the edge

Ready to bake.  The pinch pleat was to difficult for Sir N so he used a fork.
Baste with Milk. Bake for 20 min till golden brown. 180'C fan forced.

Kumara Soup (NZ recipe)

 Ingredients 


  • 2 small onions (1 large)
  • 3 medium kumara (Sweet potato)
  • 1 teaspoon butter (or margarine)
  • 1 Litre chicken Stock (I like my soup thick so used 500 ml)
  • 1 teaspoon curry powder
  • 1 medium leek
  • 250 ml cream (optional)

Method


Finely chop leek & onion
Fry onion & leek with butter till tender. Add curry and fry for two min.
Peel and chop sweet potato and add to crock pot
Add fried leek and onion and stock to potato
  • Cook till sweet potato is tender.
  • Purée using a stick blender till your soup is a smooth consistency.
  • Serve warm with bread or a dash of cream for a creamy taste.


I like my soup quite thick so if you want your soup to be of a runny consistency add in extra stock or cream for a creamy taste.  Kumara is the Maori word for sweet potato. We made this soup as part of our Expedition Earth journey to New Zealand.
